You can ask for it to rescheduled to arrange representation.

The representative can be a co-worker, or a trade union official or employee whom the union certifies in writing has experience or training in representation matters. The right to bring a union representative exists even where the union is not recognised by the employer. Legally you are not entitled to take a family member, friend or even a solicitor with you. Your employer may allow you to take someone like this - read your contract to see if it sheds any light or ask your employer directly.

If your employer will not reschedule then my advice would be to attend and very clearly state, and ask it to be put on the notes, that you object to the meeting going ahead due to the fact that you have not had sufficient time to arrange representation. Say very little in the meeting and at the end clearly state again that you feel that a new meeting should be arranged to allow you the opportunity to arrange representation.

Most employment tribunals would find it unreasonable of an employer not to rearrange a meeting of this type at least once if the employee requests it for a legitimate reason. They could be penalised by a tribunal if you take a successful action as they are not following the principles of the statutory disciplinary procedures. Can anyone give me advise on appeals against been dismissed?
Citizens advice bureau, they can help usually, or at least point you in the right direction.

Rescheduling should be possible, though it might take someone like ACAS or the cizens advice to ask for it if your boss is being a swine.

Take it no unions are present or involved? Does this place have HR, they should at least have some kind of dismissal policy in place. If not they should do and can be brought to task for not having one.

DON't go the meeting alone, take someone else if he won't reschedule (neighbour, friend) and make it clear why that other person is there because they won't reschedule and because you are wanting to take this further but have not been given sufficient time.

Having an advocate is a witness to anything said, implied, done or suggested, also boosts confidence when dealing with dodgy stuff like bullying. The meeting might have two of them so you would feel bullied by the extra person.
Can you see an attorney that specializes in employment law?
UK - contact ACAS for help, www.acas.co.uk they can arrange for a representative to be there.
